Best Mexican Rice Ever

Ingredients

  • 3 tablespoons vegetable oil
  • 1 cup uncooked long-grain rice
  • 1 teaspoon minced garlic
  • 1 1/2 teaspoons taco seasoning (I use Penzey’s Bold Taco seasoning, but any one you like for making taco meet should work. If pressed just use 1/2 tsp. cumin and  a pinch of chili powder)
  • 1/4 cup minced onion
  • 6 oz can of tomato sauce
  • 2 cups chicken broth (you can use water if you are out of broth)
  • salt

Heat the oil in a large saucepan. Add the rice and cook until puffed and golden. Add the onion and garlic and cook until the onion is translucent. Sprinkle with the taco seasoning. Then pour in the tomato sauce and chicken broth. Add salt to taste. Reduce heat to low and simmer for 20 to 25 minutes. fluff with a fork and serve.
